Not only is today Christmas Eve, it is National Eggnog Day. Although Eggnog can be enjoyed any time of the year, this year is when most people take the time to enjoy this classic beverage. To read the history of eggnog, click here. Below are five vegan recipes of the classic beverage.
1. Classic Vegan Eggnog
Ingredients:
- 2 cups almond milk or any other non-dairy milk
- 1/2 cup full-fat coconut milk
- 1/4 cup maple syrup or agave nectar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- A pinch of ground cloves
- A pinch of salt
Instructions:
- In a blender, combine all the ingredients and blend until smooth.
- Adjust sweetness and spices to taste.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with a sprinkle of ground nutmeg before serving.

- 1 cup raw cashews, soaked overnight
