1. Vegan Apple Crisp

Ingredients:

  • For the filling:
  • 4–5 cups apples, peeled and sliced (about 4–5 medium apples)
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • For the topping:
  • 1 cup rolled oats
  • ½ cup flour (whole wheat or all-purpose)
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ¼ cup coconut oil or vegan butter, melted
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, toss the sliced apples with brown sugar, cinnamon, vanilla extract, and lemon juice. Spread the apple mixture in a greased 9x13-inch baking dish.
  3. In another bowl, combine the oats, flour, brown sugar, cinnamon, melted coconut oil, and salt. Mix until crumbly.
  4. Sprinkle the topping evenly over the apples.
  5. Bake for 30–35 minutes or until the apples are tender and the topping is golden brown. Let cool slightly before serving.

2. Vegan Apple Cinnamon Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup brown sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup almond milk (or any plant-based milk)
  • ½ cup unsweetened applesauce
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1–2 cups apples, peeled and chopped (about 1–2 apples)

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flours, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the almond milk, applesauce, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the chopped apples.
  5. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  6. Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean. Let cool before serving.

3. Vegan Apple Salad with Maple Dressing

Ingredients:

  • For the salad:
  • 4 cups mixed greens (spinach, arugula, or lettuce)
  • 2 apples, cored and sliced
  • ½ cup walnuts or pecans, toasted
  • ½ cup dried cranberries or raisins
  • ¼ cup vegan feta cheese (optional)
  • For the dressing:
  • 3 tbsp maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the mixed greens, sliced apples, toasted nuts, dried cranberries, and vegan feta cheese (if using).
  2. In a small bowl, whisk together the maple syrup, apple cider vinegar, Dijon mustard, olive oil, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
