1. Vegan Apple Crisp
Ingredients:
- For the filling:
- 4–5 cups apples, peeled and sliced (about 4–5 medium apples)
- ¼ cup brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- For the topping:
- 1 cup rolled oats
- ½ cup flour (whole wheat or all-purpose)
- ½ cup brown sugar
- ½ tsp cinnamon
- ¼ cup coconut oil or vegan butter, melted
- Pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, toss the sliced apples with brown sugar, cinnamon, vanilla extract, and lemon juice. Spread the apple mixture in a greased 9x13-inch baking dish.
- In another bowl, combine the oats, flour, brown sugar, cinnamon, melted coconut oil, and salt. Mix until crumbly.
- Sprinkle the topping evenly over the apples.
- Bake for 30–35 minutes or until the apples are tender and the topping is golden brown. Let cool slightly before serving.
2. Vegan Apple Cinnamon Muffins
Ingredients:
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup brown sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 1 cup almond milk (or any plant-based milk)
- ½ cup unsweetened applesauce
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
- 1–2 cups apples, peeled and chopped (about 1–2 apples)
Instructions:
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flours, brown sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the almond milk, applesauce, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the chopped apples.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean. Let cool before serving.
3. Vegan Apple Salad with Maple Dressing
Ingredients:
- For the salad:
- 4 cups mixed greens (spinach, arugula, or lettuce)
- 2 apples, cored and sliced
- ½ cup walnuts or pecans, toasted
- ½ cup dried cranberries or raisins
- ¼ cup vegan feta cheese (optional)
- For the dressing:
- 3 tbsp maple syrup
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- ¼ cup olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the mixed greens, sliced apples, toasted nuts, dried cranberries, and vegan feta cheese (if using).
- In a small bowl, whisk together the maple syrup, apple cider vinegar, Dijon mustard, olive oil, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
